I just upgraded my DJing laptop from a Surface Pro 10 (Intel) to a Surface Pro 11 (Intel) and while with the new Surface, stem separation is blazing fast, easily 4-8* faster than on my old Surface, general performance of VDJ was better on my old one.
The system CPU usage meter already gave a hint, on my old surface it hardly ever showed any kind of CPU usage(usually 3-5%), and on the new laptop it is often at 30-50%.
The old Surface uses a Intel Core Ultra 135U cpu.
The new surface uses an Intel Cure Ultra 236V cpu.
While the 236V has better memory speed, single core performance, and GPU performance, the older Meteor Lake 135U had 12 cores and 14 threads. (236V has 8 cores and 8 threads)
In my first DJing set today, I played for 6 hours, and at one point during my set, while using a browser to download a new track, the audio glitches and froze for a tiny amount of time.
This never ever happened on the old Surface.
So now, with pain in my heart, I am considering returning the new Surface, and sticking with my old one untill someone manages to make a Surface Pro - like sevice that at least doesn't perform worse than what I am already using.
Just a heads up for anyone thinking about buying a laptop/2 in 1 for VDJ.

Did you check if the power mode was set to battery saving perhaps?
If so it's recommended to set it to balanced

An update:
The earlier CPU core hiccups and audio performance glitches were due to me using old meteor lake device drivers + old windows power plan on a newer lunar lake architecture. After a lot of resetting and reinstalling, I updated all and it now runs smoothly on the new Surface Pro.
Just in case anyone is interested in using stems live, this processor (Intel Core Ultra 236V) seems to work really well for it, without getting hot. Probably one of the few thin and light processor options that manages it this well.
