I have my iTunes library showing in VDJ and all of my playlists, but I have no tracks showing. All of the playlists are blank when I click on them. Is there something I'm missing?

What does your library consist of? Are they tracks you've purchased or tracks that you're renting?

I have an apple music subscription. and they are tracks that are downloaded to my laptop.

Apple Music files are rented - you don’t own them, so they are DRM-protected and not available to Virtual DJ.
One service that does work with VDJ is Tidal, if you get the DJ add-on. Works great for me. As do all the tracks I bought from Apple (through iTunes).
