I have a new PC with an Intel 7.1 HD sound chipset onboard. Should I use this rather than the Hercules as my sound card.
What would I need to do to set it up correctly. i.e do I need to link back to input on PC from the Herc etc...

It is better to use Hercules sound card IMO.

I have yet to see an onboard sound card that had "professional" sound quality. I am sure in the future that may change but not currently

Better dynamics of sound :)
on board sound has electronic interference, that's why USB cards are better and everyone use them ;)

Sound Intel® High Definition Audio 7.1
3 front audio ports, 6 rear analog audio ports & 2
rear digital audio ports
Thats what the PC has and a mutidude of config settings
full spec at http://h20195.www2.hp.com/V2/pdf/c00992291.pdf
It just that I get a real shitty hiss when my VDJ software gain is anything more than 0

You can't gain over 0dB with any sound card because you will have shape of sound and distortion, for that you should use external mixer.
