I am running VDJ v8 and I can't find that option. I thought I was able to do this in VDJ v7 (or am I just imagining things?).

yes, still exists
assume you have setting -> browser -> showM3UAsFolders set to yes
1) create the playlist
2) browse the "playlists" folder and open the playlist
3) choose columns to export in the "songs window"
4) rightclick the playlist in the left side navigation tree and choose "export..."
in the popup context dialog
1) select "Text" tab
2) choose export format - can be txt or csv or html
3) click OK to get the "save as..." window
