I have a controller (a Pioneer FLX10) and see the controller mapping has options to, for example, change the jogwheel brightness and disable the demo mode.
These options, such as "DNC_OUT_DEMOMODE", don't correspond to physical buttons and the VirtualDJ manual doesn't explain how I can actually use them.
How do I go about this?

Options specific to a controller are not in the main VDJ manual. They're in the setup guide for that particular controller.

That's what I meant. I can see nothing in the FLX10 setup guide about how to use these settings.
