I'm forcing myself to learn how to beatmatch but the waveform encourages cheating. Is there a way to turn off the waveform temporarily?

Yup cover the top half of your screen with a peice of cloth or something.

Borrow a pair of vinyl turntables (get belt drives, if you want some extra challenge), learn to beatmix the hardest way possible, keep doing it until you get the need to prove something out of your system and go about being a happy & confident DJ who doesn't use words like "cheating" :P
 
There are a number of skin to choose, some have separate wave display on each deck.
Other than that try to minimize the waveform by hovering your mouse over the wave display and use the scrollwheel of your mouse to a point where it's hard for you read the waveform already.

I bring up a playlist that I know really well and close my laptop to practice.
