I just bought a DJ Console Rmx and I was wondering if I could use my laptop speakers (with laptop soundcard) as the master out but also use the soundcard in the DJ Console Rmx to preview a track (headphones) without it playing on the master out?

I should say I'm running VDJ Pro 7.0.2 on W7 x64 using the 2010 Hercules Drivers and my current audio config is:

You can do it using advanced config.
Select "Advanced Config"
Set Master as your laptop soundcard.
Set Headphones as the hercules RMX soundcard output 3&4 (If that don't work try 1&2; it depends on what the hercules driver is set to do).
I had to do this with a mixer that had a soundcard (only 1 audio output) and had to use headphones plugged into the laptop, which resulted in delay... So I have to warn you there may be a delay in the sound between the 2 soundcards.

Or another possibility:
Keep your current audio configuration set to the Rmx, and run a wire from the Main Output 1/2 to the Line Input of your laptop.
Enable the Stereo mix so that the input signal comes through to the speakers , and voilà!
Using multiple soundcards for the audio configuration of a software (when possible) is always risky because the cards may not want to "collaborate" together, which in turn, might create more headaches for you...
