I would like the faders on my controller to control deck volume (achieved!) and also to automatically start the deck when above, say, 5%.

simplest way would be the faderStart setting in options.
going with script & 5% the mapping would look like this
level & param_bigger 5% ? play : nothing
going with script & 5% the mapping would look like this
level & param_bigger 5% ? play : nothing
