Yes, you can use any source
You edit it for a track in the tag editor in VDJ - simply click cover art
It will then do an online search for suggestions
But you can also overrule that and simply upload your own image as cover art for the track

So the source I choose for one track will then become the automatic source next time I import tracks?

yes^^ as soon as there is a matching image
and by the way size indication is about preview, really downloaded cover is rarely as small
