I am running VDJ on a Macbook M2 Max Pro, with a 50 inch 4K TV connected on the front of my DJ booth as an extended desktop using HDMI. This allows me to play videos, or use the slideshow feature within VDJ. According to the specs for my Macbook, it should be able to support up to 4 x external displays over Thunderbolt and HDMI... and I've even reduced the output to 30KHz.
The issue is that things start out absolutely fine, then as the night goes on, I see the waveforms within VDJ start to stutter, slow down, and eventually stop all together... literally the screen is frozen (even thought he sound output is still working). If I unplug the HDMI cable, VDJ springs back into life - so clearly it's a display issue, but I'm stumped as to how to solve this as the Macbook should easily cope with just 1 x external display.
Can anyone provide any advice please!!???

how does you mac handle another app like vlc with 4 externals?
I also assume you mean 30Hz, 30kHz would be burning your gfx card for no reason,
it's not gaming you don't need 240fps, it's nightclub visuals most people are 'perceptually altered' and can only see in 8 bit [sometimes 8^i bit]

I have my video output set at 30fps in VDJ and it looks fine. Skin fps is set to 60 but that's on Windows however. No issue with 6 hour gigs at all.

Yes - 30Hz not KHz. Never tried with any other apps as I only use the Macbook for VDJ and gigs. VDJ also set to 30 FPS.
Videos are max 720P quality - as you say, don't need anything too fancy - but the Macbook is supposed to be able to run, according to the specs for my model:

It can't even cope with one HDMI connection at 30Hz.

test another app, just to rule out the hardware, specs say it should be fine, but instead of an apple they might have sold you a lemon. [I don't know if that saying makes sense anywhere but Britain]

Try disabling the audio on the devices not being used such as the HDMI audio (on the mac, not VDJ). I have heard of similar but usually from camera/video editing software. It could be related
