Is there a way to set the vocal remover stem to say 50% or have a variable 0 to 100% vocal cut?

that would be just positioning the stem slider

stem vocal 0.5 ? & stem vocal 0.15 : stem vocal 0.5
 
Yes. The vocal remover is controlled by the Vocal stem level.

Just note that `50%` is the normal vocal level, and `0%` is fully removed. So a 50% vocal cut would be around `25%`:

stem "Vocal" 25%


For a button that toggles between normal and partially removed:

stem "Vocal" 50% ? stem "Vocal" 25% : stem "Vocal" 50%


For a knob or slider that gives you a full 0–100% vocal-cut range, use:

param_invert & param_multiply 50% & stem "Vocal"


At one end the vocal is normal, and at the other end it is fully removed.
 
You can also control the Stems via the Equalizer Potis .
When You change the Equalizer Mode to Stems ect.
