I've been using the Hercule's MK1 for a while now. But the X-fader has just about broke, so it's time to upgrade. Should I get the MK2 or an NUO4 mixer, or something else?

I notice on the MK1, that when I turn the mid, bass or trebble button's it kind of alters the sound too much. Is it the same with the MK2? For example if I have a really bassey track, and try to turn the bass of the track down it's just like turning the volume down as it cuts it out too much.

You would get a HARDWARE mixer, so better sound on EQ knobs, and better crossfader (HARDWARE, and not software emulated that midi does).

But you would miss the jogwheels...

BUT, you can always keep the mk1 as jogwheels only, and use the Nuo as a mixer.

The Nuo also has the advantage of being BOTH a hardware real mixer, AND midi controller.
So while the crossfader is hardware for audio, it can be mapped to do midi software things at the same time (for example to the video crossfader).
